We “processed” some roosters yesterday. That was fun. Not. It was necessary though. We set one aside for dinner last night, but then we were so exhausted, that we didn’t feel up to cooking a big meal. Therefore, we will have our big “Sunday Supper” tonight and have Meatless Tuesday instead of Meatless Monday. Confusing enough?
Monday: Roasted rooster, fried okra, roasted sweet potatoes, and salad (all veggies are homegrown!)
Tuesday: Black bean soup with sour cream, pickled banana peppers & cornbread
Wednesday: Pioneer Woman’s Chicken Spaghetti with salad (or other veggies from the garden)
Thursday: Chicken fried steak, mashed potatoes, gravy, green beans and (maybe biscuits)
Friday: Grilled cheese sandwiches with soup (type of soup to be determined)
I’m not planning meals for Saturday or Sunday (or next week) because we are going to Disney World!!! We are so excited, but I have NO idea when I will have time to pack or do the dozens of other things that must get done this week like cleaning out the car and getting an oil change. I might be in for late nights this week!
