Weekly Menu Plan

This week I have challenged myself to eat “as close to home” as possible.  In other words, I want to eat food from our garden as much as possible, supplemented with food from our freezer, and I hope to only buy a minimum of groceries this week.  My goal is to both save money and increase my dinnertime creativity.  Saturday’s menu is a little up in the air, as there is a possibility that Eric will be cooking bbq that day.  If that happens, I will be more than happy to throw my menu plan out the window.  YUM!

Menu Plan for October 8-14


Monday:  White chicken chili served with tortilla chips, cheese and Greek yogurt  (featuring several varieties of homegrown chili peppers and herbs)

Tuesday:  Beef pot roast with smashed potatoes, gravy, and fried okra (we are still getting okra from the garden)

Wednesday:  Ham & corn chowder with a green salad (hopefully, at least 1/2 the greens will come from my garden and the corn was frozen this summer out of our amazing corn patch!)

Thursday:  Spaghetti Carbonara with grilled shrimp, salad and homemade whole wheat rolls (eggs from our chickens, lettuce and parsley from the garden)

Friday:  Homemade whole wheat pizza with homemade pesto from our garden

Saturday:  Sweet & Sour chicken stir fry with brown rice (featuring homegrown peppers)

Sunday:  Roast chicken with sweet potato fries and whatever veggies I find in the garden (chicken will be a fresh “yard bird” and the sweet potatoes came from our garden!)
