I’ll confess y’all. My menu plan for this week is really similar to last week. That is partly because I have a lot of the same ingredients in the house, partly because we just love soups and will be making our favorites again this week, and partly because Eric is working late this week and then going hunting and I hate to make huge meals if they will go largely unappreciated!
Meatless Monday: Black bean soup with sour cream, Frito’s, pickled banana peppers and avocado
Tuesday: Pud Se Ewe Pork with brown rice (Thai style dinner with kale or mustard greens!)
Wednesday: Minestra (Beans & Greens Soup) with homemade bread
Thursday: Quesadillas & salad
Friday: Homemade pizza
Saturday: Bonfire and weenie roast at church
Sunday: Spaghetti alla Carbonara with homegrown salad
