We just love seafood in my house! Well, everyone but my son, he loves peanut butter and jelly. The rest of us, however, love seafood, so I thought I would share with you a wonderful and simple meal that we had recently. There are a lot of ways to make low country boil, but many of them aren’t that accessible for people to serve on a weeknight, but this recipe that I threw together was easy and fun!
One of the things that the kids enjoyed most was the table setting. When we do low country, we spread newspapers all over to protect the table. Some people just toss the boil right onto the papers. I love this idea in theory, but my dining room is carpeted, so we compromised by papering the table, but putting the boil in a pan!
Low Country Boil with French Bread |
Low Country Boil
1 lemon or lime
1 large onion
2 tbsp Old Bay
2 lbs potatoes
1 lb smoked sausage
10-12 half-ears of corn
1-2 lbs raw shrimp
- Fill a large stock pot about half way full of water. Add 1 lemon or lime, cut in half, one onion, quartered, and about 2 tablespoons of Old Bay Seasoning. Bring to a boil.
- When the water is boiling, add potatoes. Small red potatoes can be boiled whole. For larger ones, cut them into half or quarters so they will cook faster.
- When the potatoes have been in for about 5 minutes, add 1 lb smoked sausage, cut into 1″ hunks.
- Let boil for about 10 minutes.
- Add corn.
- Let boil for 5 minutes.
- Add 1-2 lbs of shrimp and boil just until they turn pink.
- Drain your whole concoction and serve with butter, cocktail sauce, tarter sauce, French bread, and sweet tea!
