Menu Plan Monday: Dec 17-23

Admittedly, this menu isn’t that different from last week.  We have a lot of the same things in the pantry still, and the ones that were hits will be enjoyed again.  I know that Erica and I could happily eat Minestra every day this winter, but I try to keep it down to one day a week!  


Menu Plan Week of December 17-23


Monday 12/17:  Tuna Noodle Casserole (I am going to give this recipe a try.  I have never made it before, but I have a can of tuna I need to do something with.  I hope the kids will just see the peas and noodles and give it a chance!)

Tuesday 12/18:  Duck egg quiche with salad and roasted turnips (my neighbor gave me a big bag of beautiful turnips that he grew, I’m not a huge fan of boiled turnips, but they are great when you roast them with a little olive oil, salt & pepper!)

Wednesday 12/19: Chili with sour cream, cheese, corn chips and pickled banana peppers

Thursday 12/20:   Minestra (beans and greens soup) with fresh French bread

Friday 12/21:  Homemade whole wheat pizza with homegrown salad

Saturday 12/22:  Roast with brown rice and gravy served with something green (or orange) from the garden.

Sunday 12/23:  Chicken-n-dumplins
