Wow. I haven’t posted in a few days because I haven’t had a spare minute to sit down at the computer! This past week has been a whirlwind! It has been fabulous and rewarding, but exhausting too! My dining room is still unusable, and I have made no progress whatsoever on the painting and wallpapering in there. Instead, some friends and I built a set of triple stacked bunk beds to bless a family who have just completed their second special-needs adoption in the past year. They are so cool, I can’t wait to post about our mama construction crew.
Then I bought a cow! Yep, you heard right, Green Eggs and Goats now has a resident Jersey cow named Buellah Belle, who is giving us almost four gallons of milk per day! We love our goat’s milk, but the cream line on the Jersey milk is UNBELIEVABLE!
So, without further ado, I will post my menu plan for the week, and as time allows, I’ll crank out posts about our adventures this week.

Menu Plan – January 14-20
Monday 1/14 – Corn chowder with homemade bread (with corn and peppers frozen from our garden, and lots of fresh Jersey milk, and a little chevre cheese that I froze in the fall)
Tuesday 1/15 – Fried brown rice with steak, cabbage, sprouts, carrots, peas and fresh eggs (cabbage, sprouts and eggs are homegrown)
Wednesday 1/16 – Lasagna and salad (with venison, spaghetti sauce that I put up last summer, fresh ricotta and mozzarella from our cow)
Thursday 1/17 – Steak, creamed kale and sweet potato puree (kale and sweet potatoes are homegrown)
Friday 1/18 – Whole wheat pizza with fresh mozzarella and pesto (frozen from the summer)
Saturday 1/19 – Veggie beef soup with barley and fresh cornbread
Sunday 1/20 – Shrimp & Grits (A southern favorite. Recipe coming soon!)
What!!!!! A cow! I have to admit I am envious over here. And I love her name. Your menu plans sounds wonderful.
