This has been a crazy weekend, with lots of good progress made on both the pasture fencing projects and on the dining room makeover. Luckily, I still managed to plan out some yummy and healthy meals for this week. I hope you enjoy the ideas!
Menu: January 21-27
Monday 1/21: Steak, creamed kale, sweet potato puree (kale, sweet potatoes and cream and cream cheese all come from our farm. Steak is grass fed beef from Huntsville, AL)
Tuesday 1/22: Pasta Alfredo with zucchini & chicken (Cream, butter and frozen zucchini came from our farm. Chicken, unfortunately, will not. We haven’t had a mean rooster in awhile…)
Wednesday 1/23: Pork chops, broccoli, buttered noodles (some of the broccoli and the butter come from our farm)
Thursday 1/24: Pioneer Woman’s Buffalo Chicken Salad (Salad greens & buttermilk from here)
Friday 1/25: Homemade whole wheat pizza (farm-made sauce, either tomato or pesto, with homemade mozzarella)
Saturday 1/26: We have tickets to the circus!!! We will probably go out to eat afterwards.
Sunday 1/27: Roast, brown rice and gravy with carrots (Grass-fed local beef)
There you have it! Maybe this will inspire someone to cook at home this week. If not, maybe it will just help keep me in line! Cheers!
You do inspire me! I cook almost every night and use what I can find out of my garden, which is not very productive .
I have Russian red kate, bok choy and sugar snap peas in addition to lots of herbs and laurel tree for bay leaves.

The homemade whole wheat pizza with homemade mozzarella is right up my alley! Sounds soooo good. I love that you are able to cook with ingredients that are mostly from your own garden or other local farmers. So cool!
