I’m a little late in posting my menu plan. The voices in my head told me to go buy more chickens. I listened. Anyway, last week was just nuts, we ate out twice. Once while out buying my computer, and once while out buy even more chickens. I’m sensing a pattern. One day we left the house with ground beef thawing on the counter, not realizing a cat had snuck into the house. The cat knocked the beef on the floor and ate what he could. Ick. Anyway, the meals that we didn’t cook last week will reappear on this week’s menu. This is looking like an extremely busy week for us, so I’ll have some pretty fast meals on the list.
Monday 2/4: Duck egg quiche with bacon and mushrooms, creamed kale (we are seriously addicted to this stuff!) and Pear sauce canned by my friend Susie.
Tuesday 2/5: Buffalo Chicken Chili Mac
Wednesday 2/6: Kale, sausage & bean soup
Thursday 2/7: Breakfast casserole (made Thursday morning and baked Thursday night) with fruit
Friday 2/8: Homemade pizza with fresh mozzarella
Saturday 2/9: Chicken burritos with beans & rice
Sunday 2/10: Spaghetti alla Carbonara with homegrown salad
