What the heck is a kohlrabi anyway? Well, it is a little known cruciferous vegetable, that I have grown to love over the past 2 years. I take pictures of my vegetable growing obsessively, so I can’t believe that I don’t have a picture of these growing, but picture a green ping pong ball with cabbage leaves growing out of it, and you have the general idea. Most people just use the “ball” part of the kohlrabi, either eaten raw, in a soup, or roasted. The greens are also tasty and healthy though, so I thought I would share a recipe I made up last week to use all the beautiful, wacky, kohlrabi greens!
Asian Kohlrabi Beef Noodle Bowl
- Hop on over to the Pioneer Woman website and make the sauce for her Simple Sesame Noodles. (No need to reinvent the wheel, people!)
- Cook up a pound of whole wheat spaghetti, or whatever long noodles make you happy, and place them in a serving bowl and top with the sesame dressing.
- In a large cast iron skillet (fine you can use whatever kind of skillet you like, but all the cool people use cast iron, OK?) heat a heaping tablespoon of coconut oil with about a teaspoon of sesame oil.
- When the oil is hot, add a big bunch of washed kohlrabi greens (or kale, or chard…) and toss to coat and wilt. Add a little liquid once it’s wilted. Salty pasta cooking water, a splash of the beer or wine that’s in your hand, plain water, whatever.
- Thrown in a little shot if sriracha if you like it hot!
- Simmer the greens until they are soft. About 5 minutes. Add liquid as necessary.
- Throw greens on top of the spaghetti noodles in the serving dish.
- In the same pan, heat another tablespoon of coconut oil and teaspoon of sesame oil.
- When that is hot, quickly stir fry some slice sirloin steak (grass fed, of course!) and throw it on top of the greens.
- Now toss the whole thing together so that the wonderful sesame sauce coats everything. Top with some toasted sesame seeds and enjoy!
This dish was seriously tasty, and it came together in a flash, I hope you try it!
