Now that I’m into the part of the year in which I can’t really plan meals because I never know what will be ready in the garden, I have decided it might be easier to do a meal re-cap instead of a menu plan. I’m hoping it will inspire others to eat locally and seasonally as much as possible! I’m happy to say that with the exception of the potatoes and garlic in a few meals, I grew all of our veggies right here in my garden!
Monday: Fried Green Tomato & bacon sandwiches on homemade rolls, served with fried zucchini strings and fresh-from-the-garden Silverqueen corn.
Tuesday: Pasta salad with homegrown cucumbers, tomatoes, feta, and some Krab with a k. (Oh hush, my kids love it!)
Wednesday: Pasta and meatballs with homemade tomato sauce.
Thursday: Amish sausage, local stone ground grits, tempura battered green beans, and homegrown cantaloupe.
Friday: Splurge! We went to town for dinner. 5 Guys Burgers and Fries!
Saturday: Veggie beef soup
Sunday: Roasted chicken (local, pasture raised) with homegrown corn, crash-hot potatoes and cantaloupe.
