Here’s the menu plan for this week. I hope it inspires you to get in the kitchen and create something tasty!
Monday: Hot Chicken Casserole with broccoli and brown rice
Tuesday: Peasant Pasta (spaghetti with sausage, feta, sundried tomatoes and peas)
Wednesday: Chili (or another soup I can make ahead. The jury is still out on this one…)
Thursday: Pancakes and bacon with homemade apple sauce
Friday: Homemade Pizza with Pesto sauce
Saturday: Smoked chicken, roasted sweet potatoes and broccoli. Yes, I adore broccoli. I would serve it every night if I didn’t think my family would complain!
Sunday: Steak, baked potato, and creamed chard (we’ll call it Ruth’s Chris night in!)
