Hello again! We are back from vacation, so the posting should pick up again! We had a fabulous time in Ireland, but I was glad to be back in my own bed last night! I’m actually glad to be in my own kitchen again too!
People who love to cook have a hard time staying out of the kitchen after a break, so here is my meal plan for this week. You might notice a lot of the same ingredients used over and over, since I’m trying to get back into the swing of things with just a small shopping trip this week. Besides, you can never eat enough kale, right?
Monday: T-Bone Steaks with mashed pecan-topped sweet potatoes, and corn.
Tuesday: Roasted Chicken, spaghetti with cream cheese “alfredo” sauce and green beans.
Wednesday: Spicy Peanut Butter Noodles with leftover chicken
Thursday: Minestra (beans and greens soup) with crusty bread
Friday: Home-ground grits topped with a poached egg & bacon crumbles with crispy kale
Saturday: Beef roast with carrots, brown rice and gravy
Sunday: Salmon with boiled new potatoes and green peas (I discovered in Ireland that the kids LOVE this!)
