Today I am sharing a recipe that my mom developed. Her favorite Mexican restaurant added “Fajita Spaghetti” to the menu and it quickly became a favorite. The restaurant is about 30 minutes away, though, so she decided to figure out how to make it at home. It’s really yummy, and it isn’t a combination I would have put together on my own, so I thought I would share it with you!
For the record, y’all, my mom is a great cook! If I’m good in the kitchen, it’s because she taught me how to look at a recipe for inspiration, and then make it my own using whatever I like or have on hand.
When she cooks fajita spaghetti, my mom uses a pre-mixed fajita seasoning like this one, but you could also mix up your own fajita seasoning.
Fajita Spaghetti Toppings
When you plate this dish, feel free to load it up with all the Mexican toppings you love. We went with salsa and white queso dip, but here are some other topping suggestions: cilantro, lime juice, guacamole, sliced avocado, fresh tomatoes, olives, black beans, shredded cheddar or jack cheese, pico de gallo, pickled jalapenos. Really, the only thing holding you back is your imagination (or maybe the contents of your pantry…)
- 1½ lb. flank steak, sliced
- 1 pack sweet peppers, (or 2 bell peppers) sliced
- 2 onions, sliced
- 4 cloves garlic, chopped
- 1 tbsp olive oil
- salt and pepper to taste
- 1 tbsp Fajita seasoning
- ½ tsp chili powder
- 1 lb. spaghetti
- Small tomatoes - halved and roasted in the oven for garnish (optional)
- Salsa
- White "restaurant style" queso dip
- Start spaghetti cooking according to package directions.
- Add olive oil to a pan and heat over high heat.
- Add the peppers and onions and saute until they start to soften and gain some color.
- Add the garlic and cook for about 30 seconds.
- Throw the meat into the pan and add all your seasonings.
- Cook the whole mixture just a few minutes until the meat is cooked, but still a little pink in the center.
- Drain your spaghetti and toss with the meat mixture.
- Add some to your plate and top with salsa and cheese dip. A roasted tomato on the side is a fantastic addition!
