I will admit it. I used to HATE avocados! I would even pick it out of my sushi and set it aside. Somewhere along the way, I made a complete 180 about this wonderful fruit! Now I can’t get enough and I find myself constantly craving their creamy, green goodness! My favorite way to eat them by far is in this simple homemade guacamole dip!
Recently, we invited our friend Fernando over for dinner. I was serving pork burritos with guacamole, salsa, chips, etc. He is from Mexico, so he knows good Mexican food. I became a little nervous as dinnertime approached. I kept thinking “maybe I should have just served lasagna!” I held my breath as we served our plates, but after tasting my dip, he declared (in a voice that didn’t hide his surprise) that I had made “real” guacamole! He loved it, so this has his stamp of approval!
I will warn you though, getting the seasoning right for this recipe is going to depend a lot on your taste buds. There are just too many variables, such as the acidity of your tomatoes and the juiciness of your limes, for me to give exact measurements that will always turn out perfect. My best advice is taste, taste, taste!
- 2-3 ripe avocados
- 1-2 fresh tomatoes chopped (depending on the size of the tomatoes)
- 1 small onion chopped
- 1 jalapeno seeded and chopped
- 2-3 limes (for juice)
- 1 handful fresh cilantro
- Salt & Pepper to taste
- Cut avocados in half and remove pit.
- Score with a knife and scoop out meat into a bowl.
- Mash avocado with a fork until it is the consistency you like (we like ours on the chunky side)
- Add chopped tomatoes, onion, and jalapeno
- Add the lime juice to taste (the amount needed depends heavily on the acidity of your tomatoes)
- Chop fresh cilantro and add to the bowl
- Season with salt and pepper to taste
- Enjoy!
