Apple Bacon Cobbler

I am obsessed with cobbler.

There, I said it.  I am seriously thinking that a 12 step program might be necessary.  In the mean time, I thought I would be a bad influence and share my apple bacon cobbler recipe with you!!

 I wrote this apple bacon cobbler recipe at Eric’s request.  I asked him what kind of birthday cake he wanted and he responded,

“Apple cobbler . . . with BACON!!!”

The rest, as they say, is history.  I hope you enjoy my apple bacon cobbler recipe!

Apple Bacon Cobbler
 
Yes, you heard that right.
Ingredients
  • 4-5 Slices of bacon
  • ¼ cup (1/2 stick) butter
  • 6 cups of sliced apples (any variety you have on hand)
  • 1 cup apple juice, apple cider or water
  • 1 tsp cinnamon
  • ¼ teaspoon fresh grated nutmeg
  • 1-1/2 cup sugar (divided)
  • 1-1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1-1/2 cup Buttermilk (regular milk will work too)
Instructions
  1. Preheat oven to 350 degrees.
  2. Choose a cake or lasagna pan that you want to serve your cobbler in. Place your bacon in this pan and throw it in the oven to start cooking while you do the next step.
  3. Mix together apples, juice, ½ cup sugar, cinnamon and spices in a pot.
  4. Bring to a boil on medium-high heat and cook for about 10 minutes.
  5. Add more liquid if needed, you want this a little on the soupy side.
  6. Check on the bacon and remove the pan when the bacon is done.
  7. Chop bacon into small pieces and throw it in the pot with the apples.
  8. Leave the bacon grease in the pan! Add ½ stick of butter to the pan and throw it back into the oven to melt.
  9. In a separate bowl, mix 1 cup sugar, Bisquick and buttermilk (throw in a little extra cinnamon if you are feeling wild!)
  10. Now, we are ready for the assembly, which is really the important part.
  11. Remove the pan containing the bacon grease and butter from the oven.
  12. Pour the batter over the happy pork-fat mixture.
  13. Spoon the apple-bacon mixture gently over the batter and then pour any remaining batter over the top. The key is to let this cobbler mix together on its own for layers of salty-sweet goodness.
  14. Bake at 350 for approximately 30 minutes, or until the top is golden brown.
Notes
It isn't mandatory to serve this with vanilla ice cream, but I think you'll be sorry if you don't!
