This delightful Southern spread makes a quick easy lunch or an elegant grilled cheese dinner. Go ahead and make a batch to keep on hand!
Ingredients
4 ounces chevre (or cream cheese)
1 cup grated sharp cheddar
1 cup grated Monterey jack cheese
½ cup mayonnaise
3 tablespoons chopped pimentos
1 teaspoon onion powder
¼ teaspoon salt
¼ teaspoon garlic powder
Pinch of sugar (optional)
Instructions
Combine all ingredients in a bowl or mixer and blend well.
You can use it right away, but it tastes better when it has had a few hours to sit in the refrigerator getting happy.
Notes
My mom and I disagree on the subject of sugar in the pimento cheese. I like it fine without it, she insists that a little sugar is a must and always tries to sneak it in when I'm not looking. Use your own judgement and go with what tastes good to you!
