Spaghetti Carbonara

This cheap and easy bacon and eggs pasta is sure to please everyone at your table!

Ingredients

  • 6 slices bacon chopped
  • 1 whole onion finely chopped
  • 1 clove garlic finely chopped
  • 1 lb spaghetti
  • 1/4 cup white wine
  • 3 whole eggs
  • 1/4 cup freshly grated parmesan cheese
  • 2 tbsp heavy cream
  • 2 tbsp chopped fresh parsley
  • salt and pepper to taste

Instructions

  • Cook spaghetti in large pot of boiling salted water,according to package directions until al dente
  • Meanwhile, heat a large skillet over medium high heat.  Add bacon and fry until almost crispy.
  • Add onion and cook gently for 5 minutes or until soft but notcolored. 
  • Add garlic and cook for another minute.
  • Add wine and simmer until mostly evaporated.
  • In a mixing bowl, lightly beat eggs with parmesan, cream, choppedparsley, salt and pepper.  
  • Drain spaghetti, return to pan with bacon and onion mixture.  Remove from heat and mix well.
  • Temper egg mixture by adding some of the pasta to the mixing bowl.
  • Transfer remaining pasta mixture to serving bowl.  Pour egg mixture over pasta in serving bowland stir to combine.  The heat from thespaghetti will cook the eggs.
