Healthy Popcorn 2 Ways!

Did you know that you don’t have to use your microwave or a piece of fancy equipment to make popcorn?  Unfortunately, most people don’t know this!  We have been so inundated with specialty popcorn popping equipment in the last century, that people don’t even realize anymore that you don’t need anything more than a stove, a pot and a lid!

Of course when you make your own flavored popcorn at home you can also avoid all the weird chemicals and “flavorings” that are found in commercial products.

My family currently has 2 favorite flavors that we alternate in an effort to keep everyone happy.  For a movie night in, or when we head to the drive-in, I might just be persuaded to make both!

Sweet & Salty Kettle Corn
Ingredients:
4 tbsp Extra Virgin Coconut Oil (divided)
1/2 cup popcorn kernels
2 tbsp raw local honey
Sea salt to taste
  1. Add about 3 tbsp of Coconut Oil to a large pot with a tight fitting lid.
  2. Toss in 1/2 cup of popcorn kernels.  
  3. Turn heat to medium high and cover pot.  The kernels should begin popping fairly quickly.
  4. Meanwhile heat 1 tbsp Coconut Oil with 2 tbsp raw local honey until the mixture becomes very fluid.
  5. When the popping slows down to one pop every few seconds, remove from the heat.  
  6. Pour about half of the honey mixture over the popcorn, sprinkle with sea salt and mix well with a large spoon.
  7. Repeat with the other half of the honey mixture and more salt to make sure everything is well coated.
  8. Serve and feel happy that you know exactly what kind of high quality ingredients your family is eating!
“Cheesy” Popcorn

The next type we have been loving is what I call “Cheesy Popcorn,” but please don’t tell my kids that it doesn’t actually have cheese in it, but uses a super-healthy ingredient called Nutritional Yeast (sometimes referred to as “nooch”) instead.
Ingredients:
2 tbsp Butter
2 tbsp Extra Virgin Olive Oil
1/2 cup popcorn kernels
2 tbsp Nutritional Yeast
  1. Add the butter and olive oil to a large pot with a tight fitting lid.
  2. Toss in 1/2 cup of popcorn kernels.
  3. Turn heat to medium high and cover pot.  The kernels should begin popping fairly quickly.
  4. When the popping slows down to one pop every few seconds, remove from heat.
  5. Sprinkle nutritional yeast flakes onto the popcorn and mix well with a large spoon.  
  6. Serve and enjoy!
Remember not to tell your kids this is healthy.  I promise that it tastes to me like the White Cheddar popcorn flavoring that I used to buy at the store, and my kids think it’s great!
