Weekly Menu Plan

It’s amazing what you can accomplish when you accidentally leave your phone at home!

On Thursday morning I took the kids for their weekly piano lesson at Old Field Farm General Store like I usually do, and I did pack some school work for the children to do while waiting their turn, but I somehow managed not to grab my phone as I walked out the door.  I’ll admit that for the next 5 hours while we had lessons and ran errands, I felt completely NEKKID.  Not naked.  I was not in the nude.  I was nekkid.

It was probably the best move I made all week.  During a simple half hour of down time, instead of staring blankly at a screen, I actually did what I should have been doing anyway.  I took the sad, sparse little grocery list out of my pocket, flipped it over, and made a menu plan for the week and made sure all the ingredients I needed were actually on my shopping list.

Now I know that doesn’t sound like a big thing, but getting back into the habit of doing something can sometimes be as difficult as starting in the first place.  But, I have learned over time, that I am much more likely to stick to my plan if I post it here.  It’s embarrassing when someone says “So, Heather, how was that Spaghetti alla Carbonara last week?”  And I have to answer back lamely, “Um, I was tired, so we grabbed a pizza instead.”

So, without further ado, I present my menu plan for the coming week:

Saturday:  Chicken fried steak, fried okra, gravy and either homemade grits (if the Vitamix works to grind my dent corn) or mashed potatoes.

Sunday:  Homemade pizza

Monday:  Roasted Chicken with roasted veggies (carrots, beans, whatever else needs picking) cherry tomato bruschetta with homemade bread

Tuesday:  Chicken and Veggie Fried Brown Rice with Homemade Egg Rolls

Wednesday:  Chicken-n-dumplins with green beans

Thursday:  Waffles, sausage, eggs, fruit

Friday:  Spaghetti alla Carbonara with wilted spinach

So, that should just about do it!  I was careful to plan something that is easy to reheat when Eric will be late, and something that I can cook early and reheat later on the night everyone has karate.  As an added bonus, I planned a quick, simple supper for the night that we have a field trip, in case I’m worn out afterwards.  Hopefully this plan will see me through my next piano lesson without any last minute trips to the store.

So what about you?  Is anything interesting on the menu this week?
