Fall Menu Plan (with lots of eggs!)

So in the course of about 15 minutes on Saturday, Eric and Erica both found clutches of eggs!  That means that I went from rationing the eggs to overrun with them in a short span.  I do have to say that I was thrilled that the hens were hiding eggs rather than just not laying them at all!  So, I will be doing quite a few egg recipes this week.  I never sell “clutch” eggs, just in case, although they all passed the “float-test”.

Monday:  Emeril’s Pot Roast Pastitsio (made with leftover roast from this weekend) served with Parmesan roasted broccoli

Tuesday:  Home-ground grits topped with poached eggs, cheese, bacon crumbles, and sauteed kale (I made this last week and it was a huge success!)

Wednesday:  Spaghetti alla Carbonara

Thursday:  Halloween!  Pizza mummies with eyeballs (grapes)

Friday:  Roasted chicken with brown rice, Greek salad and deviled eggs

Saturday:   Chicken Noodle Bowl (Surin knockoff) with leftover chicken and bean sprouts and Thai Coconut Soup

Sunday:  Steak with mashed sweet potatoes and creamed greens with soft whole wheat dinner rolls
