Perfect Pimento Cheese

Have you had pimento cheese before?  I ask because there is a slight chance that it is just a Southern thing, so perhaps my friends in other parts of the world have never tried this simple delight.  (Please leave me a comment and let me know!)

Well, if you’re not in the know, pimento cheese is a simple spread that is great on cold sandwiches, crackers or veggies.  More recently, it has begun to migrate into the realm of hot foods in grilled pimento cheese sandwiches.  It can even take your boring burger to new heights by replacing the sad slice of plastic American cheese on a cheeseburger.  But I digress.

It’s good, people.  Very, very good.

My mommy friends and I eat this at nearly every play date we attend.  

(As a side note, we used to pretend that the play dates were for the children to interact with other children, blah, blah, blah.  Now we just come right out and confess that the play dates are absolutely for the grown ups, but the children are allowed to tag along and play with each other while we eat delicious food and laugh like hyenas.)

Ok, I’ll shut up now and just share the darn recipe, OK?

Perfect Pimento Cheese
 
This delightful Southern spread makes a quick easy lunch or an elegant grilled cheese dinner. Go ahead and make a batch to keep on hand!
Ingredients
  • 4 ounces chevre (or cream cheese)
  • 1 cup grated sharp cheddar
  • 1 cup grated Monterey jack cheese
  • ½ cup mayonnaise
  • 3 tablespoons chopped pimentos
  • 1 teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • Pinch of sugar (optional)
Instructions
  1. Combine all ingredients in a bowl or mixer and blend well.
  2. You can use it right away, but it tastes better when it has had a few hours to sit in the refrigerator getting happy.
Notes
My mom and I disagree on the subject of sugar in the pimento cheese. I like it fine without it, she insists that a little sugar is a must and always tries to sneak it in when I'm not looking. Use your own judgement and go with what tastes good to you!

If your children turn up their noses at pimentos, no worries.  My friend Mandy just leaves the pimentos out and calls it un-pimento cheese.  They gobble it down!
