Monday: Grilled pork chops with Greek marinade, brown rice, sauteed homegrown Red Russian kale with garlic, black olives, homemade bread (baked by Erica) and Feta dip (from homemade cow’s milk feta.)
Tuesday: Asian Noodle Bowl – Grass-fed sirloin steak with Simple Sesame Noodles and Asian sauteed kohlrabi greens (from the front yard. Who needs bushes?)
Wednesday: Creamy Kohlrabi Soup with fresh bread (baked by my awesome friend Jennifer!) homemade raw butter, and optional ham & cheese sandwiches.
Thursday: Grass-fed meatloaf, corn chowder with Swiss Chard (with frozen corn from last year’s garden, frozen peppers, homegrown chard & fresh milk from Beulah)
Friday: Fried fish (caught by Eric in Gulf Shores) with pumpkin risotto (why, no, it isn’t pumpkin season, thanks for asking. I have realized though, that I better hurry up and eat all the veggies we froze last year before the garden really starts coming in this year! I froze quite a bit of pumpkin, and have only used a few packages.)
We have fresh Chilton county peaches as well AND our early peach tree has started producing, so a whole wheat cobbler is DEFINITELY in the works. I’ll report back!
Also, the kale and chard are still doing extremely well, so we have started drinking green smoothies again. YUM! I hope to get a couple of these recipes posted on the blog soon! I’m so glad to have fresh foods to cook with again, and time to actually do it!
